Yes - Wixie projects can have multiple pages, so you can create an Activity with multiple pages.
If you've already created several projects and want to combine them, you can follow the instructions posted here, but you will choose pages from projects that you own.

This can be done!
If you want to combine projects that your students have created into one big project, start by logging into Wixie and then going into the Authoring Mode by selecting to "Create or Edit a Project". Once there, start a new project. The first page will be your coverpage. Now go to the Wixie Hand, select import and import the pages from the different students.
Students can combine on their own by going to the Wixie Hand, selecting Import and importing pages.
Or comibine projects from their classmates.
