Currently, there is not a way to remove an assessment from a project or an activity.
If you've added an assessment to an Activity, you can change the assessment by selecting a new or different assessment from the Assessments tab and then assigning it to the activity.
We have had a few people ask for the ability to remove an assessment, so we will be coming out with an update to Wixie that will add that capability. I'm not sure of the date for this update.
